2 cups wholemeal flour 2 medium bananas, mashed 3 eggs ½ tsp bi-carb soda ½ tsp salt 1 tsp vanilla essence 1 tsp cinnamon (optional)
Method
Preheat oven 180 °C. Mix all ingredients together. Pour into a loaf tin lined with baking paper (or a cupcake tray to create lunch box-ready individual serves). Cook for about 25 minutes, until lightly browned. If making as cupcakes check after 15 minutes.
