1 medium onion 1/4 cup self raising flour 1/3 cup polenta 3/4 cup cheese, grated 2/3 cup milk 2 eggs 30 grams butter 1 tomato, chopped (or use dried)
Method
Preheat Oven 200◦C. Pan fry onion until brown. Combine all ingredients in a mixing bowl and pour into paper-lined cupcake baking tray. Bake for about 20 minutes or until muffins rise slightly and are lightly browned.
