  • Easy savoury muffins
  • Crispbread with cheese and tomato
  • Vegie sticks (three colour capsicum)

Tip:

  • Keep the lunch box cold and kids hydrated with an icy bottle of water. Half-fill a bottle and lay it on its side in the freezer, making sure there is some air getting to the lid. Fill with water just before packing in the lunch.

  • Easy fried rice
  • Wholegrain wrap with leftover beef mince, grated cheese, Greek yoghurt, corn kernels, grated/finely sliced carrot, mixed lettuce leaves
  • Yogurt with strawberries (chopped or blended)
  • Hummus as a side to dip celery/bean/capsicum/zucchini sticks
  • Water

Tip:

  • Double the ingredients to make extra and use leftovers in lunchboxes. Store in fridge for up to 3 days or freeze.
  • If short on time, use 90-second packet rice and/or frozen vegetables.

Recipe/tip: 

  • Rice paper rolls: Use any vegies (or salad) you have on hand. A good rule of thumb is to go for at least five colours. Chop finely to make it easier to fold your wrap. Prepare rice paper according to packet directions. Fill with chosen veg and/or salad filling – we used carrot, corn, capsicum and celery.
  • Store over-ripe bananas in the freezer in a zip-lock bag. Defrost for use in the easy banana bread recipe.

  • Potato salad
  • Wholemeal bread spread with avocado
  • Apple
  • Milk popper
  • Water

Recipe/tip

  • Potato salad: Combine boiled and cooled potatoes, corn kernels and chopped capsicum, beans and celery and a hard-boiled egg to make a quick and easy potato salad. Use natural yoghurt or low-fat mayonnaise for dressing. Add seeded mustard for extra zing.
